Vegetable Ratatouille

  • 2 lbs zucchini
  • 3 lbs eggplant
  • 3 lbs tomatoes
  • 2 lbs sweet peppers
  • 1 lb onions
  • 3 cloves
  • salt
  • pepper
  • thyme
  • bay
  • olive oil

Cook the peeled vegetables (tomatoes pressed and seeded) separately for 30 minutes in olive oil.

Gather the cooked vegetables together. Add the garlic, salt and pepper and cook for another 30 minutes.

Delicious whether hot or cold!
